Cantina Famiglia Scottà is a family-run business, which has always had a passion for vine cultivation and Prosecco production.

The estate is located in the hilly area of Valdobbiadene, a naturally wine-growing region and part of the Unesco World Heritage Site.

Respect for the nature and the final product

The company has always developed a production philosophy that is closely linked to respect for nature and the final product. In this company, fertilization is natural and herbicides and pesticides are not used.

Since the beginning, we have implemented the milling of the grapevine shoots, the vines and the grass. We have always used the under-row movement, which means overturning the soil at the base of the vines and hoeing the under-row exclusively by hand. In alternate years, natural fertilization is carried out directly from certified stables. Our commitment to sustainable viticulture is reflected in the quality of our wines.

The harvesting is generally carried out in September once the grapes have reached proper ripeness.

The grapes are harvested exclusively by hand on sunny days to ensure that they are at their best.

The Scottà family’s wine thus reaches the market rich in aromas and flavours, the same aromas that recall the land that lovingly generated them.

THE VINIFICATION:
From the gentle pressing to the Charmant method

After the HANDMADE HARVEST, the grapes are immediately delivered to the winery. Using a soft press the must is separated from the marc.

The must, which is left to decant to separate small impurities, is transferred to the fermentation tanks and kept at a controlled temperature.

At the end of this process, the wine is separated from the fermentation lees and left to rest in special container while waiting to be used as a base for sparkling wine or spumante.

Within the production of our wines, we utilize the Charmant vinification system, an Italian method for sparkling prosecco using state-of-the-art autoclaves.
