Vinification: Soft pressing with pneumatic press, static decantation of the must, controlled-temperature fermentation (16-18°C).

Foaming: In steel autoclaves; refermentation temperature is between 14° and 16° C, tartaric stabilisation is carried out cold (4°C). Secondary fermentation in autoclaves lasts 80 to 90 days, after which isobaric bottling takes place.
Organoleptic characteristics:
Colour: straw yellow, intense mousse with fine and persistent perlage
Nose: elegant white peach, hints of golden apple and exotic fruit
Taste: Round, harmonious and balanced with excellent persistence.
Food pairings: Unbeatable as an aperitif for a pleasant afternoon with friends. It enhances its characteristics when paired with shellfish and crustaceans.
Serving recommendations: Serve chilled at a temperature of approximately 7°C
Storage: In a cool, dark place. Avoid long stays in the refrigerator.
Time of consumption: To be enjoyed young, in the year following the harvest.
