The Cantina Famiglia Scottà is a family-run winery that has always been passionate about viticulture and the production of Prosecco.
The Scottà family’s estate is located in the hilly region of Valdobbiadene, an area naturally suited to viticulture, and is part of the designated as a UNESCO World Heritage Site.
Respect for nature and for the final product
This company has always adhered to a production philosophy that is closely tied to respect for nature and the final product. The company uses natural fertilizers and does not use herbicides or desiccants.
We have always ground up the vine shoots, vines , and grass. We have always used the “sottofila” method, which involves turning the soil at the base of the vines. and weeding between the rows is done exclusively by hand. Every other year, natural fertilizer is applied directly from certified livestock barns.

The grapes are harvested exclusively by hand
The grape harvest generally takes place in September, once the grapes have reached the proper level of ripeness.
The grapes are harvested exclusively by hand on sunny days to ensure they reach their full potential.
The Scottà family’s wine then reaches the market rich in aromas and flavors—the same aromas that evoke the land that lovingly produced them.

The grape harvest generally takes place in September, once the grapes have reached the proper level of ripeness.

WINE-MAKING:
From gentle pressing to the Charmat method
The grapes are harvested by hand and is immediately taken to the cellar. The must is separated from the pomace using a gentle press.
The must, left to settle to separate out small impurities, is transferred to fermentation tanks and kept at a controlled temperature.
Once this process is complete, the wine is separated from the fermentation lees and left to rest in special containers until it is used as a base for semi-sparkling or sparkling wine.
In the production of our wines we use the Charmat winemaking system, an Italian method for producing Prosecco sparkling wine using state-of-the-art autoclaves.
WINE-MAKING:
